Crockpot Chicken

For dinner Wednesday night I had crockpot chicken, veggies with alfredo sauce, salad, rolls and Italian ice for dessert. Here's the recipe for the chicken. It is so easy to make and delicious!! I don't have an amount for the chicken because I just judge it by eye so you'll have adjust it to your family size.

Crockpot Chicken

Boneless Chicken Breasts (about 1 package)
1 bottle Thousand Island dressing
1 packet onion soup mix
1 jar (18 oz.) apricot preserves

Spray crockpot with cooking spray. Add chicken breasts. (Can be frozen or thawed). In bowl, mix remaining ingredients and pour over chicken. Cook on high for 4 hours.

Once done, shred chicken while still in sauce. I use a pastry cutter to do this and it works well. I like to add a little cornstarch to thicken the sauce but it's not necessary. To serve, pour over hot rice. Enjoy!!
