Banana Nut Bread

A little chilly weather is headed our way after days in the 70's. I miss winter and still am wishing for snow. I decided to make Banana Nut Bread so at least it will smell like winter. :-D

Banana Nut Bread

2 1/2 cups flour
1/2 cup sugar
1/2 packed brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1/3 cup milk
1 1/4 cups mashed bananas (2 to 3 medium)
1 egg
1 cup chopped walnuts

Heat oven to 350*. Great bottom only of 9x5x3 loaf pan. Mix all ingredients; beat 30 seconds. Pour into pan. Bake until wooden pick inserted in center comes out clean, 65 to 70 minutes. Cool slightly. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing.

To store, wrap and refrigerate no longer than 1 week. It's never lasted that long at our house.
